Salted Chocolate Chip Toffee Cookies

These cookies are perfectly soft on the inside and crispy on the outside. I can't get enough.



I could eat these cookies everyday!

Salted Chocolate Chip Toffee Cookies


Toffee Ingredients:

  • 1 stick salted butter

  • ½ c sugar

  • ½ tsp salt

Instructions:

  1. Add sugar, butter, and salt to small pot

  2. Continue to whisk until golden brown color forms (this takes about 10 minutes)

  3. Pour into lined baking sheet and let fully cool

  4. Break toffee into bite size pieces

Cookie Ingredients:

  • 2 sticks salted butter

  • 1¼ brown sugar

  • ¼ cane (or granulated) sugar

  • 2 eggs

  • 1 tbsp vanilla

  • 2 tsp espresso powder

  • 2 c flour

  • 1 tsp baking soda

  • 1 c chocolate chips/chunks (or more if you prefer)

  • Toffee

  • Sea salt

Instructions:

  1. Brown your butter in a pot and let cool for ~10 minutes

  2. Once butter is cooled, add in your sugar

  3. Once mixed together add in your eggs and vanilla

  4. Combine flour, baking soda, and salt in a bowl

  5. Add flour mixture to wet ingredients and mix with a spoon (make sure not to over mix)

  6. Add in your chocolate chips and toffee bits

  7. Let cookie dough sit in fridge for at least 1 hour

  8. Once cookie dough has sat in fridge, preheat oven to 350F

  9. While oven is preheating, form 2 tbsp balls with cookie dough in lined baking pan

  10. Once oven is heated to 350F, bake cookies for 10 minutes

  11. Let cookies rest for ~5 minutes then top with sea salt and they are ready to serve
