These Birria tacos need to be on your dinner menu because they are better than any you could buy. And because it's chicken they cook so much faster than beef or lamb birria tacos.

These Birria tacos are honestly better than any tacos you could find in the store.
Chicken Birria Tacos
Ingredients:
Tortillas
Monterey jack cheese
3 chicken thighs
1 red onion
2 roma tomatoes
4 garlic cloves
2 bay leaves
2 tsp chipotle peppers in adobo sauce
½ c. cilantro
2 tsp. oregano
1 tsp. paprika
½ tsp. cinnamon
1 tsp cumin
1 tsp salt
1 tsp black pepper
1 c. chicken broth
Optional: chopped cilantro, red onion, and lime wedges
Instructions:
Add oil to a sauce pan
Once oil is hot, add in chicken thighs and season with salt and pepper
Once thighs are browned, remove from saucepan
Add tomatoes, onion, cilantro, garlic, chipotle peppers in adobo sauce, oregano, paprika, cinnamon, and cumin to sauce pan and cook down (about 10 minutes)
Once cooked down, remove and add to blender
Blend together to create a smooth sauce to go over chicken
Add chicken thighs back to sauce pan
Add blended sauce, chicken broth, and bay leaves to sauce pan
Cook on high until sauce starts to simmer then reduce to low and cover
Let chicken cook for 30-40 minutes (until chicken is tender enough to shred with fork)
Once chicken is cooked, remove from pan and shred chicken with fork
Place chicken back into sauce and begin to assemble tacos
To assemble tacos: 1. Dip tortilla in sauce 2. Place tortilla on skillet 3. Top tortilla with cheese, shredded chicken, cilantro, and onion, then close 4. Once one side of tortilla starts to brown, flip
Serve with lime wedges and consommé and enjoy!
