Halal Cart Chicken and Rice
Chicken Ingredients:
2 lbs chicken thighs
1 tbsp garlic ginger paste
½ tsp turmeric
½ tsp oregano
1 tbsp onion powder
1 tbsp cumin
2 tbsp paprika
½ tsp black pepper
1 tsp salt
¼ c olive oil
Instructions:
Season chicken with all ingredients and let marinate for at least 1 hour
Once chicken is marinated, add olive oil to skillet and cook on both sides
Once cooked, remove from skillet and roughly chop into bite size pieces
Add chicken back into skillet
Rice Ingredients:
2 c hot water
1 c basmati rice
1 Maggi cube
1 tsp paprika
½ tsp cumin
½ tsp turmeric
Instructions:
Wash your rice until water runs clear and then soak for ~30 minutes before cooking
Add olive oil to skillet, once hot, add in drained rice and let toast
Combine water with Maggi cube, paprika, cumin, and turmeric
Add water mixture to rice
Once water starts to boil, cover and lower temp to low
Cook for 15 minutes, make sure to leave untouched
Once rice is cooked, remove from heat and let rest for ~5 minutes
White Sauce Ingredients:
¼ c Mayo
½ c plain Greek yogurt
2 tsp lemon juice
1 tbsp white vinegar
½ tsp black pepper
½ tsp salt
Water to thin
Instructions:
Combine all ingredients
Slowly add in water until you get desired consistency
