Chipotle Chicken Tacos

The best tacos for your taco Tuesday

Juiciest, most flavorful chicken!

Chipotle Chicken Tacos

Ingredients:

  • Tortillas

  • 2 lb chicken thighs

  • 1 can chipotle peppers in adobo

  • 3 garlic cloves

  • ¼ yellow onion

  • Juice from 1 lime (~3 tablespoons)

  • Handful of cilantro

  • ¼ c olive oil

  • ½ tbsp cumin

  • ½ tbsp chili powder

  • ½ tbsp oregano

  • ½ tbsp smoked paprika

  • ½ tbsp salt

  • ½ tbsp black pepper

  • ½ plain Greek yogurt

  • Mango salsa: mango, roma tomato, red onion, cilantro, lime juice, salt, and pepper

Instructions:

  1. In a food processor, blend chipotle peppers, cilantro, garlic, onion, lime juice, and spices (leave about 3 tbsp of mixture aside once blended to make a chipotle sauce)

  2. Once blended, add to chicken thighs and let marinate for at least one hour

  3. Once chicken is marinated, add olive oil to skillet

  4. Once hot add in chicken thighs

  5. Remove chicken thighs from skillet once cooked and let rest

  6. Once chicken has rested for ~10 minutes, chop into bite size pieces

  7. Add chicken bake into skillet

  8. Combine plain greek yogurt with left over blended mixture to make chipotle sauce

  9. Heat up tortillas

  10. Top tortillas with: chicken, mango salsa, and chipotle sauce
