Why go to chipotle when you can have it even better at home??
Steak
Ingredients:
2 lb steak
2 tbsp avocado oil
2 tbsp adobo sauce
2 tsp minced garlic
2 tsp oregano
2 tsp cumin
1 tsp garlic powder
1 tsp onion powder
2 tsp chili powder
1 tsp salt
½ tsp pepper
Instructions:
Season steak with adobo sauce, garlic, oregano, cumin, garlic powder, onion powder, chili powder, salt, pepper, and 1 tbsp avocado oil,
Let steak marinate for at least 1 hour
Once steak is marinated, add 1 tbsp avocado to skillet
Once hot, add in steak
Once cooked, remove from heat and let rest for ~10 minutes
Once steak is rested, dice into bite size pieces
Serve over cilantro lime rice, with guac, corn salsa, pico, black beans, plain greek yogurt, and lettuce
Cilantro Lime Rice
Ingredients:
1 c basmati rice
2 c chicken stock
1 tbsp avocado oil
¼ c cilantro
Juice from 1 lime
Instructions:
Wash rice until water is clear
Let rice soak in water fro 20-30 minutes
Once rice has soaked, add avocado oil to pot
Add drained rice to oil and let toast for 1-2 minutes
Once rice is toasted, add in chicken stock
Once stock starts to boil, cover rice and turn heat to low
Let rice cook, untouched, for 15 minutes
Once rice is cooked, remove from heat and let rest for 5-10 minutes
Once rice has rested, add in cilantro and lime juice
Guacamole
Ingredients:
2 avocados
1 diced roma tomato
¼ c diced red onion
¼ c cilantro
Juice from 1 lime
Garlic salt and pepper to taste
Instructions:
Mash avocados
Combine all ingredients and add garlic salt and pepper to taste
Pico de Gallo
Ingredients:
2 diced roma tomatoes
¼ c diced red onion
¼ c cilantro
Juice from 1 lime
Salt and pepper to taste
Instructions:
Combine all ingredients and add salt and pepper to taste
Corn Salsa
Ingredients:
Cooked corn from 1 cob
½ diced roma tomato
¼ c diced red onion
2 tbsp chopped cilantro
Juice from 1 lime
Salt and fresh pepper to taste
Instructions:
Combine all ingredients and add salt and pepper to taste
Black Beans
Ingredients:
1 can black beans
1 tbsp avocado oil
¼ diced yellow onion
2 tsp minced garlic
2 tsp cumin
2 tsp chili powder
1 tsp salt
½ tsp black pepper
Juice from 1 lime
¼ c water
Instructions:
Wash and drain black beans
In a pot, add the oil and saute diced onion and garlic
Add cumin, chili powder, salt, and pepper and sauté for a few minutes
Add the washed beans and water. Let simmer until thickened.
Add the lime juice and serve with chipotle bowl
