Shredded Beef Bowls

These shredded beef bowls were so tender and flavorful, I can't wait to make them again!

First gather up all your ingredients

Season your beef chunks with salt, pepper, and garlic powder and sear on all sides

In a food processor, blend together onion, tomato, garlic, vinegar, lime juice, and seasoning

Add blended mixture, chicken stock, and bay leaves to pot

Once it starts to boil, cover and cook on low for ~4-5 hours

Serve with your favorite toppings! I had it with cilantro lime rice, pico, corn salsa, lettuce, and guac!

This was probably one of the most flavorful burrito bowls I’ve had!

The juiciest, most flavorful shredded beef.


Shredded beef


Ingredients:

  • 2 lbs chuck roast beef

  • 2 tbsp olive oil

  • ½ yellow onion

  • 2 roma tomatoes

  • 6 garlic cloves

  • 3 tbsp cumin

  • 2 tbsp garlic powder

  • 1 ½ tbsp salt

  • 1 tbsp pepper

  • 1 tbsp onion powder

  • ½ can chipotle peppers in adobo paste

  • 2 tbsp oregano

  • 1 tsp ginger powder

  • 2 tbsp white vinegar

  • 3 tbsp lime juice

  • 2 c chicken stock

  • 2 bay leaves

Instructions:

  1. Season beef with 1 tbsp cumin, 1 tbsp garlic powder, 1 tbsp salt, and ½ tbsp black pepper

  2. Add olive oil to pot and sear beef on all sides

  3. While beef is searing, add onion, tomato, garlic, vinegar, lime juice, 2 tbsp cumin, 2 tbsp oregano, 1 tbsp garlic powder, 1 tbsp onion powder, ½ tbsp salt, ½ tbsp pepper, and 1 tsp ginger powder to food processor and blend 

  4. Add blended mixture to seared beef along with chicken stock

  5. Let pot come to a boil and cover

  6. Turn heat to low and let sit for 4-5 hours or until beef is fork tender

  7. Enjoy with rice, pico, corn salsa, and guac
