This chicken was so tender and flavorful, I can't wait to make it again!
Season your chicken with salt, smoked paprika, chili powder, cumin, and adobo and let marinate for at least 1 hour
Add olive oil to skillet and once hot, add in seasoned chicken thighs
Once cooked, remove from skillet and shred using 2 forks
Add peppers, onion, and jalapeño to skillet, once softened, add chicken back in along with rotel
To assemble taco, dip tortilla into juices of chicken then place on skillet, top with cheese and chicken
Fold tortilla and make sure to cook on both sides
Serve with a side of rice (rice recipe below)

Pulled chicken tacos
Makes about 8 servings
Ingredients:
2 lb chicken thigh
1 tbsp olive oil
1 tbsp and 1 tsp adobo
1 ½ tbsp cumin
1 tbsp chili powder
1 tbsp smoked paprika
2 tsp salt
½ green bell pepper
½ red bell pepper
½ red onion
1 jalapeño
10 oz can rotel
Instructions:
Season chicken with olive oil, cumin, chili powder, smoked paprika, salt, and 1 tbsp adobo and let sit for ~30 minutes
Once chicken is marinated, add olive oil to skillet and once hot add in chicken
Once chicken is cooked, remove from skillet and shred using 2 forks
Add peppers, onion, and jalepeno to same skillet used to cook the chicken and season with 1 tsp adobo
Once veggies soften a bit, add chicken back in along with rotel (if you want more juices add about 5 oz water to skillet)
Cover and let simmer
Top with cilantro when ready to serve
Seasoned Rice
Ingredients:
1½ basmati rice
1 tbsp olive oil
½ yellow onion
2 tsp garlic
8 oz can tomato sauce
1 tsp cumin
2 c hot water
1 Maggi cube
Instructions:
Wash rice until water runs clear and then soak for ~30 minutes
Add olive oil to a pot, once hot add in onion and garlic
Sauté onion and garlic for ~2 minutes, then add in tomato sauce and washed rice
Combine water and Maggi cube until it’s dissolved then add to pot on high heat
Once water starts to boil, cover rice and lower heat to low
Let rice cook for ~15 minutes (don’t open lid while rice is cooking)
Once rice is cooked, fluff it up and let rest for ~10 minutes
